In other news, my dinner tonight is sole stuffed with spinach, red peppers, and asiago and vegetarian mushroom risotto (taste test in advance of work potluck tomorrow; I still prefer it made with chicken stock, but it nonetheless passes muster). The House is back in session next week and I am trying to beat into my head that the food I cook and bring with me for lunch is cheaper, better, and more fabulous than the food in the cafeteria. There are a lot of vegetables in my fridge at the present moment.

So if you do not want to leave a valentine, or if you want to leave something better than a valentine, what's your favourite work-lunch recipe?

I can't cook a person-sized meal anyway, so I always have leftovers. Today I had lasagna, tomorrow is homemade mac-n-cheese. Having a microwave at my disposal makes it easier, though. And I've been craving pasta salad with artichokes and a lot of garlic.

It does seem like I eat a lot of pasta.

When I do bring homecooked stuff to work, it's usually leftovers as well. I'll deliberately make 2 or three extra meals sometimes and save them for lunches or dinners when I'm feeling lazy.

Leftovers, absolutely. I cook up a big crockpot full of chicken corn chowder, or chili, or something like that and put the leftovers into a combination of dinner-sized portions (for the freezer) and lunch-sized portions (for work lunches).

My go-to work lunch is my mom's chili:

Brown 1 lb. ground chuck (or substitute turkey, etc.) with 1 medium chopped onion and 1 chopped green bell pepper.

Add:
2 cups/1 can crushed tomatoes
2 cups/1 can red beans
1 small can tomato sauce
3 T. chili powder
2 t. cumin
1 large crushed garlic clove

Cook on low for 1hr.

Measurements are approximate. I just toss stuff in. :)
